Description

A quick and delicious one-pot meal featuring chicken, broccoli, and penne pasta in a savory Thai peanut sauce.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 8.8 ounces penne pasta
  • 2 1/2 cups chicken broth
  • 1/2 cup Thai peanut sauce

Instructions

  1. In a large pot, add chicken cubes, broccoli florets, penne pasta, and chicken broth.
  2. Bring the mixture to a boil over medium-high heat, then reduce heat and simmer uncovered, stirring occasionally, until pasta is al dente and the liquid has mostly reduced, about 18–20 minutes.
  3. Stir in Thai peanut sauce until evenly coated. Serve hot.
