Description

A quick and easy one-pot meal featuring pasta, ground beef, black beans, and a delicious taco seasoning sauce.


Ingredients

  • 300 g small pasta, such as elbow macaroni
  • 400 g ground beef
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 2 tablespoons taco seasoning
  • 2 cups chicken broth
  • 1 cup shredded cheese

Instructions

  1. In a large pot, cook the ground beef over medium-high heat until well browned, breaking it apart with a spoon as it cooks. Drain excess fat.
  2. Add the drained black beans, corn kernels, taco seasoning, and chicken broth to the pot. Stir in the uncooked pasta and bring to a simmer.
  3. Reduce heat, cover, and simmer, stirring occasionally, until the pasta is tender and most of the liquid is absorbed, about 15 minutes.
  4. Stir in the shredded cheese until melted and thoroughly combined before serving.

Notes

  • You can substitute ground turkey for a leaner option.
  • Feel free to add your favorite vegetables to the mix.
  • For a spicier kick, add diced jalapeños or hot sauce.
