One-Pan Balsamic Chicken & Asparagus is a simple and delicious meal that’s easy to prepare and cook in just one pan, making clean-up a breeze.

- 2 lbs boneless, skinless chicken breasts
- 2 cups asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 1 medium carrot, julienned (optional)
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and whisk together the balsamic vinegar, olive oil, honey, minced garlic, Italian herbs, salt, and pepper in a small bowl.
- In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat and season the chicken breasts with salt and pepper. Sear the chicken for 3-4 minutes on each side until golden brown.
- Pour the balsamic mixture over the chicken and add the asparagus, cherry tomatoes, and julienned carrots around the chicken.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let sit for a few minutes, drizzle with remaining sauce, and serve warm.
Notes
- Feel free to add other vegetables for more variety.
- Leftovers can be stored in the refrigerator for up to 3 days.
