Description

One-Pan Balsamic Chicken & Asparagus is a simple and delicious meal that’s easy to prepare and cook in just one pan, making clean-up a breeze.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 medium carrot, julienned (optional)
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and whisk together the balsamic vinegar, olive oil, honey, minced garlic, Italian herbs, salt, and pepper in a small bowl.
  2. In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat and season the chicken breasts with salt and pepper. Sear the chicken for 3-4 minutes on each side until golden brown.
  3. Pour the balsamic mixture over the chicken and add the asparagus, cherry tomatoes, and julienned carrots around the chicken.
  4. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from the oven, let sit for a few minutes, drizzle with remaining sauce, and serve warm.

  • Feel free to add other vegetables for more variety.
