Ingredients

  • 1 large baguette (or ciabatta loaf)
  • 1 cup mixed olives, pitted
  • 2 tbsp capers
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 4 oz goat cheese, crumbled
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prepare the olive tapenade by combining mixed olives, capers, minced garlic, lemon juice, and olive oil in a food processor. Pulse until coarsely chopped.
  2. Slice the baguette into thick pieces and spread a generous amount of olive tapenade on one side of each slice.
  3. Top the tapenade with crumbled goat cheese and press the slices together to form a sandwich.
  4. Toast the sandwich in a skillet over medium heat for 2-3 minutes on each side until golden brown.
