- 1 large baguette (or ciabatta loaf)
- 1 cup mixed olives, pitted
- 2 tbsp capers
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 4 oz goat cheese, crumbled
- 2 tbsp extra virgin olive oil
Instructions
- Prepare the olive tapenade by combining mixed olives, capers, minced garlic, lemon juice, and olive oil in a food processor. Pulse until coarsely chopped.
- Slice the baguette into thick pieces and spread a generous amount of olive tapenade on one side of each slice.
- Top the tapenade with crumbled goat cheese and press the slices together to form a sandwich.
- Toast the sandwich in a skillet over medium heat for 2-3 minutes on each side until golden brown.
