Ingredients

  • 2 ½ cups vanilla ice cream
  • 8 oz crushed pineapple in juice (undrained)
  • ¼ cup coconut milk
  • ¼ cup cream of coconut, plus 2 tablespoons for rimming
  • ¼ cup rum (substitute with extra pineapple juice for a non-alcoholic version)
  • Shredded sweetened coconut flakes (for rimming)
  • Whipped cream (for topping)
  • Maraschino cherries (for garnish)

Instructions

1. Prepare the Glasses:

  • Pour 2 tablespoons of cream of coconut onto a shallow plate.
  • Add shredded coconut flakes to a separate bowl.
  • Dip the rims of your glasses into the cream of coconut, then into the coconut flakes to coat them completely. Set aside.

2. Blend the Cocktail:

  • In a blender, combine:
    • Vanilla ice cream
    • Crushed pineapple (with juice)
    • Coconut milk
    • ¼ cup cream of coconut
    • Rum (or substitute with extra pineapple juice).
  • Blend until smooth and creamy.

3. Serve:

  • Pour the blended mixture into your prepared glasses.
  • Top with a generous dollop of whipped cream and a maraschino cherry for garnish.
