Description

A refreshing and delicious No Bake Summer Berry Lasagna that layers whipped cream, cheesecake, and blueberry jello for a perfect summer treat.


Ingredients

Scale
  • 1 and 2/3 cup heavy cream – chilled
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
  • 3 cups graham cracker crumbs
  • ¼ cup strawberry jam
  • ½ cup + 2 tablespoons unsalted butter – melted
  • Red gel food coloring
  • ½ cup unsalted butter – softened
  • 8 oz. cream cheese – softened
  • 1 cup powdered sugar
  • 2/3 cup diced fresh strawberries
  • 1 cup whipped cream
  • 2 (3 oz. pkg) berry blue Jello (or other flavor to taste)
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup canned crushed pineapple – drained from juice
  • 2 ½ cups whipped cream (for topping)
  • Fresh strawberries – halved
  • Fresh blueberries
  • ¼ cup chocolate chips

Instructions

  1. Combine graham cracker crumbs, strawberry jam, melted butter, and red food coloring. Mix until evenly moistened and press into a 13 x 9 x 2 inch dish. Freeze to firm.
  2. Make whipped cream by beating chilled heavy cream until soft peaks form. Add powdered sugar and vanilla and mix until stiff peaks form. Reserve 1 cup for the cheesecake layer.
  3. Cream together softened cream cheese, powdered sugar, vanilla, and softened butter for the cheesecake layer. Mix in the 1 cup of whipped cream, then gently fold in diced strawberries and spread over the crust. Refrigerate to set.
  4. For the blueberry jello salad, dissolve berry blue Jello in boiling water in a large bowl. Let cool for 15-20 minutes, then stir in crushed pineapple and blueberry pie filling.
  5. Spread the blueberry jello layer over the chilled cheesecake layer. Refrigerate until jello is completely set.
  6. Top with remaining whipped cream and arrange fresh berries on top before serving. Melt chocolate chips, drizzle over the lasagna using a ziplock bag.
  7. Store in the fridge.

Notes

  • Ensure the cheesecake layer is thick enough to support the jello layer.
  • Do not pour warm jello over the cheesecake layer as it may melt.
  • Can use different flavors of jello if preferred.
