Monkey Muffins are delightful treats that combine the flavors of bananas, chocolate, and coconut for a sweet and satisfying snack.
Ingredients

- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 1 cup granulated sugar
- 1–1/2 tablespoons baking powder
- 1 tsp salt
- 2 cups milk (2% preferred)
- 2 tsp vanilla extract
- 2 eggs
- 1 cup canola oil
- 2 ripe bananas (mashed)
- 3/4 cup sweetened coconut
- 1 cup chocolate chips + more for sprinkling
Instructions
- Preheat oven to 400°F and line your baking tins.
- Combine the first 5 ingredients (flours, baking powder, sugar, salt) and set aside.
- Mix egg, oil, vanilla, and milk in a mixer bowl with a paddle attachment.
- Add mashed banana and mix slowly to avoid splashing.
- Slowly add the dry mixture and mix until combined.
- Mix in chocolate chips.
- Scoop about 2 tablespoons of batter into each lined baking cup.
- Sprinkle with coconut and more chocolate chips.
- Bake for 20 minutes or until the toothpick test comes out clean.
- Cool on a wire rack.
- Store in Ziploc bags on the counter for about 4 days or freeze if needed.

- Can be stored for up to 4 days at room temperature.
- Freezing is an option for longer storage.
