Description

Monkey Muffins are delightful treats that combine the flavors of bananas, chocolate, and coconut for a sweet and satisfying snack.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 1 cup granulated sugar
  • 11/2 tablespoons baking powder
  • 1 tsp salt
  • 2 cups milk (2% preferred)
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 cup canola oil
  • 2 ripe bananas (mashed)
  • 3/4 cup sweetened coconut
  • 1 cup chocolate chips + more for sprinkling

Instructions

  1. Preheat oven to 400°F and line your baking tins.
  2. Combine the first 5 ingredients (flours, baking powder, sugar, salt) and set aside.
  3. Mix egg, oil, vanilla, and milk in a mixer bowl with a paddle attachment.
  4. Add mashed banana and mix slowly to avoid splashing.
  5. Slowly add the dry mixture and mix until combined.
  6. Mix in chocolate chips.
  7. Scoop about 2 tablespoons of batter into each lined baking cup.
  8. Sprinkle with coconut and more chocolate chips.
  9. Bake for 20 minutes or until the toothpick test comes out clean.
  10. Cool on a wire rack.
  11. Store in Ziploc bags on the counter for about 4 days or freeze if needed.

  • Can be stored for up to 4 days at room temperature.
  • Freezing is an option for longer storage.
