Description

Mini Chicken Fajita Wonton Cups are a delicious and easy appetizer filled with seasoned chicken and peppers, topped with cheese and sour cream.


Ingredients

  • 1 package (12 ounces) wonton wrappers
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper (red or green), thinly sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt (for topping)
  • Fresh cilantro, chopped (for garnish)
  • Slices of jalapeño (optional, for extra heat)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a mini muffin tin. Press each wonton wrapper into the cups, shaping them to fit. Bake the wontons for about 8-10 minutes until they are golden and crispy. Remove from the oven and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through.
  4. Add the sliced onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender and slightly caramelized.
  5. Once the wonton cups have cooled slightly, fill each cup with the chicken and veggie mixture. Top each filled cup with a sprinkle of shredded cheese.
  6. Return the filled wonton cups to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a minute. Top each cup with a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, and jalapeño slices if desired. Serve warm and enjoy!
