Mini Breakfast Quesadilla Circles are bite-sized, cheesy treats filled with scrambled eggs, vegetables, and optional sausage, perfect for any breakfast or brunch.

- 4 small flour or corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup scrambled eggs (about 2 large eggs)
- 1/2 cup cooked breakfast sausage, crumbled (optional)
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup fresh spinach, chopped
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Cooking spray or olive oil for the skillet
- Salsa or sour cream for serving
Instructions
- In a medium skillet, heat a small drizzle of olive oil over medium heat. Add the diced onions and bell peppers, sautéing until the onions are translucent (about 3-4 minutes). Stir in the cooked sausage (if using) and chopped spinach, cooking for another 1-2 minutes until the spinach wilts.
- In a bowl, beat the eggs with garlic powder, cumin, salt, and pepper. Pour the mixture into the skillet with the vegetables, stirring gently until the eggs are cooked through. Remove from heat and set aside.
- Lay out your tortillas on a flat surface. On half of each tortilla, sprinkle a layer of cheddar cheese, followed by a scoop of the egg and veggie filling. Top with additional cheese for extra melty goodness and then fold the tortillas over to create semicircles.
- Heat a non-stick skillet or griddle over medium heat and lightly spray with cooking spray or add a drizzle of olive oil. Place the folded quesadillas in the skillet, cooking for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Make sure not to overcrowd the pan; cook in batches if necessary.
- Once cooked, remove quesadillas from the skillet and let them cool slightly. Cut each quesadilla into smaller wedges or circles using a biscuit cutter or a knife.
