Description

Mini BBQ Ranch Biscuit Melts are a delicious snack or appetizer that combine tender biscuit dough with a flavorful filling of chicken, BBQ sauce, and ranch dressing, topped with cheese and onion.

  • 2 cups biscuit mix
  • 3/4 cup cold milk
  • 1 cup shredded cooked chicken
  • 1/2 cup BBQ sauce (your favorite brand)
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Fresh parsley, chopped (for garnish)
  • Cooking spray

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
  2. Prepare the Biscuit Dough: In a large mixing bowl, combine the biscuit mix and cold milk. Stir until just combined. The dough will be slightly sticky.
  3. Form Biscuit Bases: Turn the dough out onto a floured surface and knead it gently a few times. Roll it out to about 1/2-inch thick and use a round biscuit cutter or a glass to cut out circles (about 3 inches in diameter). You should have about 12-15 circles.
  4. Layer the Fillings: Place half of the biscuit circles on the prepared baking sheet. In a bowl, mix the cooked chicken, BBQ sauce, ranch dressing, garlic powder, and smoked paprika. Spoon a generous amount of this mixture onto each biscuit round on the baking sheet.
  5. Add Cheese & Onion: Top each filled biscuit with a sprinkle of shredded cheddar cheese and a few pieces of diced red onion.
  6. Cover with Biscuit Tops: Take the remaining biscuit circles and place them on top of the filled biscuits, creating little sandwiches.
  7. Bake: Bake in the preheated oven for about 15-18 minutes, or until the tops are golden brown and the cheese is melted.
  8. Garnish & Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley for a pop of color and serve warm.
