- 3/4 cup cold milk
- 1 cup shredded cooked chicken
- 1/2 cup BBQ sauce (your favorite brand)
- 1/4 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Fresh parsley, chopped (for garnish)

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
- Prepare the Biscuit Dough: In a large mixing bowl, combine the biscuit mix and cold milk. Stir until just combined. The dough will be slightly sticky.
- Form Biscuit Bases: Turn the dough out onto a floured surface and knead it gently a few times. Roll it out to about 1/2-inch thick and use a round biscuit cutter or a glass to cut out circles (about 3 inches in diameter). You should have about 12-15 circles.
- Layer the Fillings: Place half of the biscuit circles on the prepared baking sheet. In a bowl, mix the cooked chicken, BBQ sauce, ranch dressing, garlic powder, and smoked paprika. Spoon a generous amount of this mixture onto each biscuit round on the baking sheet.
- Add Cheese & Onion: Top each filled biscuit with a sprinkle of shredded cheddar cheese and a few pieces of diced red onion.
- Cover with Biscuit Tops: Take the remaining biscuit circles and place them on top of the filled biscuits, creating little sandwiches.
- Bake: Bake in the preheated oven for about 15-18 minutes, or until the tops are golden brown and the cheese is melted.
- Garnish & Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley for a pop of color and serve warm.
