Description

Ingredients

  • 10.5 ounces penne pasta
  • 2 cups cooked chicken, diced
  • 13.5 fluid ounces coconut milk
  • 2 tablespoons mild curry paste
  • 1 cup frozen peas

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne according to package instructions until al dente. Drain well.
  2. In a saucepan over medium heat, combine coconut milk and mild curry paste. Stir frequently until the mixture is hot and smooth.
  3. Stir in the diced cooked chicken and frozen peas. Simmer for 3-5 minutes until the peas are tender and the chicken is heated through.
  4. Add the drained pasta to the sauce. Toss thoroughly to coat. Serve immediately.
