Description

A refreshing Mediterranean salad made with zucchini and yellow squash ribbons, cherry tomatoes, red onion, parsley, and feta cheese, dressed with olive oil and lemon juice.


Ingredients

Scale
  • 2 medium zucchinis
  • 2 medium yellow squash
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Wash the zucchinis and yellow squash thoroughly. Using a vegetable peeler or mandoline, slice them lengthwise into thin ribbons that are tender but retain crunch. Place ribbons in a large mixing bowl.
  2. Halve the cherry tomatoes and thinly slice the red onion. Add both to the bowl with the zucchini and squash ribbons.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to make the dressing.
  4. Pour the dressing over the vegetable mixture and toss gently to coat all ingredients evenly.
  5. Sprinkle chopped fresh parsley and crumbled feta cheese over the salad. Toss gently again and serve immediately or chill briefly.

Notes

  • For extra flavor, you can add olives or capers.
  • Feel free to substitute feta cheese with a vegan alternative if desired.
