Description

A delicious and easy Mediterranean dish featuring bell peppers stuffed with a flavorful tuna mixture.


Ingredients

  • 4 medium bell peppers (red, yellow, or green)
  • 2 cans (5 oz each) chunk light tuna, drained
  • 1 small red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a bowl, mix drained tuna, red onion, cherry tomatoes, feta cheese, olive oil, oregano, basil, salt, and pepper until combined.
  3. Stuff each bell pepper generously with the tuna mixture and place them upright in a baking dish.
  4. Bake for 25-30 minutes or until the peppers are tender and slightly charred at the edges.
  5. Drizzle with fresh lemon juice before serving.

  • Feel free to use any color bell peppers based on your preference.
