- 4 medium bell peppers (red, yellow, or green)
- 2 cans (5 oz each) chunk light tuna, drained
- 1 small red onion, finely diced
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a bowl, mix drained tuna, red onion, cherry tomatoes, feta cheese, olive oil, oregano, basil, salt, and pepper until combined.
- Stuff each bell pepper generously with the tuna mixture and place them upright in a baking dish.
- Bake for 25-30 minutes or until the peppers are tender and slightly charred at the edges.
- Drizzle with fresh lemon juice before serving.
Notes
- Feel free to use any color bell peppers based on your preference.
- For added flavor, consider garnishing with fresh herbs like parsley.
