  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine chopped salmon, breadcrumbs, feta cheese, Kalamata olives, parsley, dill, egg, lemon zest, lemon juice, garlic powder, black pepper, and salt. Mix until well incorporated.
  2. Shape the mixture into 6–8 patties, about 1/2-inch thick. Place on a plate and refrigerate for 15 minutes to firm up (optional but helps hold shape).
  3. Heat olive oil in a large skillet over medium heat. Fry patties for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F/63°C).
