- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 large egg, beaten
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine chopped salmon, breadcrumbs, feta cheese, Kalamata olives, parsley, dill, egg, lemon zest, lemon juice, garlic powder, black pepper, and salt. Mix until well incorporated.
- Shape the mixture into 6–8 patties, about 1/2-inch thick. Place on a plate and refrigerate for 15 minutes to firm up (optional but helps hold shape).
- Heat olive oil in a large skillet over medium heat. Fry patties for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F/63°C).
