Ingredients

  • 1 cup of uncooked green lentils
  • 1 large English or Persian cucumber, diced

  • A handful of Kalamata olives, chopped
  • 1/3 cup of crumbled feta cheese
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of red wine vinegar
  • Juice of one fresh lemon
  • 2 teaspoons of Dijon mustard
  • 1 teaspoon of honey
  • 1 teaspoon of dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and cook the lentils in a saucepan with three cups of water for about 20 minutes until tender.
  2. While the lentils are cooking, chop the cucumber, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, and dried oregano to make the dressing.
  4. Once the lentils are cooked and cooled, combine them with the chopped vegetables and crumbled feta cheese in a large bowl.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill the salad in the fridge for at least 30 minutes before serving.
