Ingredients

  • Chicken Breasts: 4 boneless, skinless
  • Zucchini: 2 medium-sized
  • Olive Oil: 3 tablespoons
  • Garlic: 3 cloves, minced
  • Lemon: 1, juiced and zested
  • Herbs (Oregano, Basil, Thyme): 2 teaspoons each
  • Cheese (Parmesan or Feta): 1 cup, grated or crumbled
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. Season the chicken breasts with salt, pepper, and half of the oregano, basil, and thyme. Optionally, pound the chicken breasts to an even thickness.
  3. Slice the zucchini into rounds or half-moons. Toss zucchini with olive oil, garlic, lemon juice, lemon zest, and the remaining herbs. Season with salt and pepper.
  4. Place the seasoned chicken in the center of the baking dish and arrange zucchini around it in an even layer.
  5. Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (75°C). Add cheese during the last 5 minutes of baking.
  6. Remove from oven and let chicken rest for 5-10 minutes before slicing. Serve with zucchini and garnish with herbs or olive oil if desired.

Notes

  • For richer flavor, chicken thighs can be used.
  • Feel free to use different vegetables, such as bell peppers or eggplant.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
