A refreshing and vibrant Mediterranean Celery Salad loaded with fresh vegetables and a zesty dressing.
Ingredients

- 8 cups organic celery, sliced on a diagonal
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 2–4 tablespoons celery leaves, chopped
- 1/3 cup red onion, thinly sliced
- 1/2 cup kalamata olives
- 1/2 cup extra-virgin olive oil
- 1/4 cup lemon juice
- 1/2 teaspoon grated lemon zest
- 1 tablespoon Dijon mustard
- 1–1/2 teaspoons dried oregano
- 1 clove garlic, grated
Instructions
- Rinse and dry all vegetables. Slice celery diagonally and chop herbs. Thinly slice red onion and halve cherry tomatoes.
- In a large bowl, combine celery, tomatoes, parsley, basil, celery leaves, red onion, and kalamata olives.
- In a mason jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, and garlic until well combined.
- Drizzle dressing over the salad ingredients and gently toss to combine.
- Season with black pepper to taste and serve immediately or refrigerate for later enjoyment.
Notes
- Adjust the amount of celery leaves based on personal preference.
- For a spicier kick, consider adding a pinch of red pepper flakes to the dressing.
