Description

A refreshing and vibrant Mediterranean Celery Salad loaded with fresh vegetables and a zesty dressing.


Ingredients

  • 8 cups organic celery, sliced on a diagonal
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 24 tablespoons celery leaves, chopped
  • 1/3 cup red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1 tablespoon Dijon mustard
  • 11/2 teaspoons dried oregano
  • 1 clove garlic, grated

Instructions

  1. Rinse and dry all vegetables. Slice celery diagonally and chop herbs. Thinly slice red onion and halve cherry tomatoes.
  2. In a large bowl, combine celery, tomatoes, parsley, basil, celery leaves, red onion, and kalamata olives.
  3. In a mason jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, oregano, and garlic until well combined.
  4. Drizzle dressing over the salad ingredients and gently toss to combine.
  5. Season with black pepper to taste and serve immediately or refrigerate for later enjoyment.
