Description
A fresh and colorful Mediterranean Black bean salad packed with herbs and topped with feta cheese.
Ingredients
Scale
- ½ cup black beans
- 1 cup arugula
- ¼ cup parsley
- Handful of basil leaves
- 2 tbsp crumbled feta cheese
- Handful olives
- 1 garlic clove
- 1 cup tomatoes
- 1 tbsp olive oil
- 1 scallion, chopped
- 1 tbsp sesame seeds, toasted
- 1 roasted green pepper, chopped
- 1 tbsp pickled jalapenos
Instructions
- Chop the vegetables.
- Roast the peppers in a nonstick pan with olive oil (if desired).
- Rinse and drain the canned beans.
- Add everything to a bowl and mix.
- Add salt and pepper if desired (I did not need salt, because of the feta and olives).
- Enjoy immediately.
Notes
- Feel free to add other vegetables or herbs as per your taste.
- This salad can be served as a main dish or a side.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
