Description

A fresh and colorful Mediterranean Black bean salad packed with herbs and topped with feta cheese.


Ingredients

Scale
  • ½ cup black beans
  • 1 cup arugula
  • ¼ cup parsley
  • Handful of basil leaves
  • 2 tbsp crumbled feta cheese
  • Handful olives
  • 1 garlic clove
  • 1 cup tomatoes
  • 1 tbsp olive oil
  • 1 scallion, chopped
  • 1 tbsp sesame seeds, toasted
  • 1 roasted green pepper, chopped
  • 1 tbsp pickled jalapenos

Instructions

  1. Chop the vegetables.
  2. Roast the peppers in a nonstick pan with olive oil (if desired).
  3. Rinse and drain the canned beans.
  4. Add everything to a bowl and mix.
  5. Add salt and pepper if desired (I did not need salt, because of the feta and olives).
  6. Enjoy immediately.

Notes

  • Feel free to add other vegetables or herbs as per your taste.
  • This salad can be served as a main dish or a side.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
