Ingredients

  • 1 small yellow onion, finely diced or grated
  • 3 cloves garlic, minced
  • ½ cup dried breadcrumbs
  • 1 large egg
  • ¼ cup chopped fresh parsley
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt

Instructions

  1. In a large mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, parsley, black pepper, and salt. Mix until just combined.
  2. Shape the mixture into small meatballs, about 2 tablespoons each, and place them on a lined baking sheet.
  3. In a saucepan, heat your favorite tomato sauce or crushed canned tomatoes with salt and pepper. Let it simmer.
  4. Heat a skillet over medium heat with oil. Cook the meatballs for 6-8 minutes, turning occasionally until browned and cooked through.
  5. Transfer the cooked meatballs to the simmering tomato sauce and let them cook together for an additional 5-10 minutes.
  6. Prepare rice according to package instructions. Serve the meatballs over rice, topped with sauce.
