Description

A delightful salad combining ham, turkey, Swiss cheese, and a creamy dressing, perfect for a light meal.

Ingredients

Scale
  • 1 cup mayonnaise
  • 1 1/2 teaspoons lemon juice
  • 2 teaspoons white vinegar
  • 1 1/2 teaspoons yellow onion, grated
  • 1 1/2 teaspoons granulated sugar
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon mustard powder
  • 2 teaspoons fresh parsley, chopped
  • 1 hard-boiled egg, grated
  • 1 pound cooked ham, cut into strips
  • 1 pound turkey breast, cut into strips
  • 1 pound Swiss cheese, cut into strips
  • 1/2 cup sweet gherkin pickles, sliced
  • 1 head iceberg lettuce, shredded
  • 12 pimento-stuffed green olives
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a blender, combine lemon juice, vinegar, salt, Dijon mustard, mustard powder, grated onion, and granulated sugar. Blend until the sugar dissolves.
  2. Transfer the mixture to a container and stir in parsley, grated egg, and mayonnaise. Chill until ready to use, up to 5 days.
  3. In a large bowl, toss the shredded lettuce, ham, turkey, Swiss cheese, pickles, and about 1 1/2 cups of the prepared dressing.
  4. Adjust seasoning with salt and pepper, toss again, and serve topped with green olives.
