Ingredients

- 600 g cheese tortellini, cooked and cooled
- 300 g cooked chicken, shredded
- 150 g cherry tomatoes, halved
- 60 g baby spinach
- 150 g mayonnaise
- 60 g grated parmesan cheese
- 2 tablespoons chopped sun-dried tomatoes
- 1 tablespoon chopped basil
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2–3 tablespoons milk
Instructions
- In a bowl, whisk together mayonnaise, grated parmesan, sun-dried tomatoes, chopped basil, garlic powder, salt, and pepper. Gradually add milk until the dressing reaches a pourable consistency.
- Place the cooked and cooled tortellini, shredded chicken, cherry tomatoes, and baby spinach in a large mixing bowl.
- Pour the dressing over the salad ingredients. Toss thoroughly to ensure even coating.
- Cover and refrigerate for 30 minutes to allow flavors to meld before serving.
Notes
- For a vegetarian version, substitute chicken with chickpeas or grilled vegetables.
- Different pasta shapes can be used according to preference.
- Can be made a day ahead for marinated flavors.
