Description

A creamy and delicious pasta salad featuring cheese tortellini, shredded chicken, and fresh vegetables, perfect for any gathering.


Ingredients

  • 600 g cheese tortellini, cooked and cooled
  • 300 g cooked chicken, shredded
  • 150 g cherry tomatoes, halved
  • 60 g baby spinach
  • 150 g mayonnaise
  • 60 g grated parmesan cheese
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 tablespoon chopped basil
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 23 tablespoons milk

Instructions

  1. In a bowl, whisk together mayonnaise, grated parmesan, sun-dried tomatoes, chopped basil, garlic powder, salt, and pepper. Gradually add milk until the dressing reaches a pourable consistency.
  2. Place the cooked and cooled tortellini, shredded chicken, cherry tomatoes, and baby spinach in a large mixing bowl.
  3. Pour the dressing over the salad ingredients. Toss thoroughly to ensure even coating.
  4. Cover and refrigerate for 30 minutes to allow flavors to meld before serving.

Notes

  • For a vegetarian version, substitute chicken with chickpeas or grilled vegetables.
  • Different pasta shapes can be used according to preference.
