Ingredients

- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mixed vegetables (carrots, bell peppers, and zucchini)
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl, mix maple syrup, olive oil, thyme, garlic powder, salt, and pepper.
- Place chicken thighs in a baking dish and brush the maple mixture over them.
- In a separate bowl, toss mixed vegetables with balsamic vinegar, salt, and pepper.
- Arrange the vegetables around the chicken in the baking dish.
- Bake for 35-40 minutes or until the chicken is cooked through and the vegetables are tender.
- Let rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken thighs for a few hours before cooking.
- You can substitute any preferred vegetables.
