Description

A delicious and hearty dish featuring roasted sweet potatoes drizzled with maple Dijon dressing, topped with creamy burrata and crunchy toasted walnuts.


Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup walnuts, chopped
  • 8 ounces burrata cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, Dijon mustard, salt, and black pepper. Toss until well coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  5. While sweet potatoes are roasting, toast the walnuts in a dry skillet over medium heat for 5-7 minutes, stirring frequently, until golden and fragrant.
  6. Remove the sweet potatoes from the oven and let cool slightly.
  7. To serve, place the roasted sweet potatoes on a serving platter, top with torn burrata cheese, and sprinkle with toasted walnuts.
  8. Garnish with fresh parsley before serving.
