Description

Luxurious Raspberry Pistachio Macarons are delicate, flavorful treats with a vibrant raspberry filling and a delightful pistachio-infused shell.

Ingredients

Scale
  • 1 cup powdered sugar
  • ¾ cup almond flour
  • 2 tablespoons finely ground pistachios
  • 2 large egg whites, at room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • A few drops of green food coloring (optional)
  • ½ cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Sift the powdered sugar, almond flour, and ground pistachios together into a large bowl.
  2. In a clean mixing bowl, beat the egg whites with a pinch of salt until foamy, then gradually add granulated sugar and whip until stiff peaks form.
  3. Gently fold the sifted dry ingredients into the whipped egg whites.
  4. Transfer the batter to a piping bag and pipe circles onto a parchment-lined baking sheet.
  5. Allow the macarons to rest at room temperature for 30-45 minutes.
  6. Preheat the oven to 300°F (150°C) and bake the macarons for 14-16 minutes.
  7. In a saucepan, combine raspberries, sugar, and lemon juice; cook until thickened, strain, and let cool.
  8. Beat the softened butter and gradually add powdered sugar and vanilla to make buttercream.
  9. Fold the cooled raspberry mixture into the buttercream.
  10. Assemble the macarons by pairing shells and piping raspberry buttercream between them.
  11. Let assembled macarons rest in the refrigerator for at least 24 hours before serving.

Notes

  • Ensure your mixing bowl is completely clean and dry to achieve maximum volume in the egg whites.
  • Use a kitchen scale for accuracy when measuring the ingredients for best results.
  • Stir the raspberry mixture gently to avoid splattering.
  • Letting macarons sit after assembly improves their texture.
