Ingredients

  • 3 pounds beef chuck roast
  • 1 cup beef broth
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced onions
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Season the roast with salt, pepper, Italian seasoning, and garlic powder.
  3. Pour the beef broth over the seasoned roast.
  4. Add the sliced bell peppers and onions on top of the roast.
  5. Cover the slow cooker and cook on low for 8 hours or high for 4 hours until the beef is tender and easily shreds with a fork.
  6. Once cooked, remove the beef from the slow cooker and shred it with two forks.
  7. Return the shredded beef to the slow cooker and stir it into the juices.
  8. Serve the Italian beef on its own or in low carb wraps, zucchini boats, or lettuce wraps.
