Ingredients

Scale
  • 2 pounds of russet potatoes
  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup buttermilk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • 1/4 cup crumbled bacon
  • Vegetable oil for frying

Instructions

  1. Peel the russet potatoes and cut them into thin strips to resemble fries.
  2. Rinse the fries under cold water to remove excess starch, then pat dry with paper towels.
  3. In a shallow dish, combine flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper, if using.
  4. Dip the potato strips in buttermilk, then dredge them in the seasoned flour mixture, ensuring they are well-coated.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. Carefully add the coated fries to the hot oil in batches, frying until golden brown and crispy, about 3-5 minutes per batch.
  7. Remove the fries with a slotted spoon and drain on a paper towel-lined plate.
  8. Preheat your oven to 350°F (175°C).
  9. Place the cooked fries on a baking sheet and sprinkle with cheddar and Monterey Jack cheeses.
  10. Bake in the preheated oven until the cheese is melted and bubbly, about 5-7 minutes.
  11. Remove from the oven and garnish with sliced jalapeños, chopped green onions, and crumbled bacon.
  12. Serve hot and enjoy your homemade Louisiana Voodoo Fries!

Notes

Use Fresh-Cut Fries for the Best Texture 🍟 – If using fresh potatoes, cut them into thin strips, soak them in cold water for 30 minutes, then pat dry before frying.
Don’t Overload the Fries with Seasoning 🌶 – Start with a light sprinkle and add more to taste so the Cajun spice doesn’t overpower the dish.
Melt the Cheese in Layers 🧀 – For even cheesiness, layer the fries with half the cheese, melt, then add the rest.
Make It Spicier! 🔥 – Add extra cayenne or drizzle with hot sauce for serious heat lovers.
Homemade Ranch for Extra Flavor! 🥗 – Mix ½ cup mayo, ¼ cup sour cream, 2 tbsp buttermilk, garlic powder, onion powder, salt, pepper, and fresh herbs.
