  • 2 oz Gruyère cheese, shredded
  • 2 oz sharp cheddar cheese, shredded
  • 2 tbsp cream cheese, softened
  • 4 slices sourdough bread or brioche
  • 2 tbsp unsalted butter, softened
  • 1 tbsp mayonnaise
  • 1 tsp fresh chives, finely chopped (optional)
  • Pinch of salt and pepper
  • 1/2 tsp lemon zest (optional)

Instructions

  1. Prepare Lobster Filling: In a small mixing bowl, gently combine lobster meat, cream cheese, mayonnaise, chives, lemon zest, and a pinch of salt and pepper until uniformly blended.
  2. Butter Bread Slices: Arrange bread slices on a clean surface. Evenly spread unsalted butter on one side of each slice.
  3. Add Cheese Layers: Distribute half of both Gruyère and cheddar cheeses onto the unbuttered sides of two bread slices.
  4. Add Lobster Mixture: Spoon the lobster filling evenly over the cheese layers. Top each portion with the remaining shredded cheeses.
  5. Assemble Sandwiches: Place the remaining bread slices over each sandwich, ensuring the buttered sides face outward.
  6. Toast Sandwiches: Preheat a large skillet or griddle over medium heat. Place sandwiches on the surface and cook 3–4 minutes per side, pressing lightly, until bread turns golden and cheese is melted.
  7. Finish and Serve: Remove sandwiches from the skillet and allow to rest for 1 minute. Slice and serve immediately while hot.

Notes

  • For extra flavor, consider adding a pinch of cayenne pepper to the lobster filling.
  • Use fresh lobster for the best taste, but pre-cooked lobster also works well.
