This recipe is easy to customize, whether you prefer different cheeses, extra heat with jalapeños, or a healthier twist with Greek yogurt instead of sour cream. It’s perfect as a main dish or a side, and it’s guaranteed to impress!

Ingredients

Scale

For the Baked Potatoes

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

For the Steak Bites

  • 1 pound sirloin or ribeye steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon Worcestershire sauce

Toppings

  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (or Greek yogurt)
  • 4 slices crispy bacon, crumbled
  • ¼ cup chopped green onions
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

Step 1: Bake the Potatoes

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes clean and pat them dry.
  3. Rub each potato with olive oil and sprinkle with kosher salt to create a crispy skin.
  4. Place directly on the oven rack or a baking sheet and bake for 50-60 minutes, until fork-tender.

Step 2: Cook the Steak Bites

  1. While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
  2. Season the steak bites with salt, pepper, smoked paprika, and Worcestershire sauce.
  3. Sear the steak for 1-2 minutes per side until browned and slightly crisp on the edges.
  4. Add butter and garlic, tossing the steak bites to coat them in the garlic butter.
  5. Remove from heat and let the steak rest while you prepare the toppings.

Step 3: Assemble the Loaded Baked Potatoes

  1. Once the potatoes are done, slice them open and fluff the inside with a fork.
  2. Sprinkle in cheese so it melts into the warm potato.
  3. Top with steak bites, crispy bacon, sour cream, and green onions.
  4. Garnish with fresh parsley, if desired. Serve immediately!

Notes

  • For extra crispy potato skins, bake the potatoes directly on the oven rack instead of a baking sheet.
  • Rest the steak before serving to keep it juicy and tender.
  • Want a spicy kick? Add sliced jalapeños or a drizzle of hot sauce on top.
  • Leftover steak works great for this recipe! Just reheat gently before adding to the potatoes.
