Description

Delightful lemon truffles that deliver a refreshing zesty flavor, perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 1 box lemon cake mix
  • 7 tablespoons melted butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (optional but recommended)
  • ¾ cup granulated sugar, divided

Instructions

  1. Start by placing your lemon cake mix into a large bowl. Add the melted butter, fresh lemon juice, and lemon zest. Stir everything together until a soft dough forms. It will be a little sticky at first—that’s a good sign.
  2. Scoop out portions of the dough and roll them into small balls, about 2 inches wide. If your hands get sticky, lightly grease them with a bit of butter.
  3. Pour the remaining granulated sugar into a shallow dish. Roll each lemon truffle in the sugar until it’s completely coated.
  4. Lay the truffles on a plate or baking sheet in a single layer and refrigerate them for at least 30 minutes. Once they’re firm, they’re ready to serve.

Notes

  • The addition of lemon zest enhances the truffle’s flavor and aroma.
  • These truffles can be stored in the refrigerator for up to a week.
  • Feel free to experiment with different coatings, such as shredded coconut or crushed nuts.
