Description

As a busy mom, I know how precious time can be, especially when it comes to whipping up something delightful in the kitchen. That’s why I absolutely adore this Lemon Raspberry Cream Cheese Danish! It’s the perfect blend of zesty lemon and sweet raspberry, all wrapped in flaky pastry. Whether you’re looking to impress guests or simply treat yourself after a long day, this recipe is a quick solution that brings joy to any table.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup fresh raspberries
  • 1 egg, beaten (for egg wash)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry sheet to smooth out creases. Cut the pastry into 4 equal squares.
  3. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest. Mix until smooth and creamy.
  4. Place a generous tablespoon of the cream cheese mixture in the center of each pastry square. Top with a few fresh raspberries.
  5. Fold the corners of the pastry squares towards the center, pinching to seal the filling inside. Brush the tops with the beaten egg for a golden finish.
  6. Bake in the preheated oven for 15-20 minutes, or until the pastries are puffed and golden brown.
  7. Remove from the oven and let cool slightly. Dust with powdered sugar before serving, if desired.

Notes

  • Ensure the cream cheese is softened for easy mixing.
  • Feel free to adjust the amount of raspberries based on your preference.
  • These pastries are best served fresh but can be stored in an airtight container for a day.
