Instructions
Preparing the Crust
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, letting the excess hang over the sides for easy removal.
 - In a medium bowl, combine almond flour, coconut flour, salt, and lemon zest. Stir in the melted butter and honey until the mixture resembles coarse crumbs.
 - Press the mixture evenly into the bottom of the prepared pan, and bake for 12-15 minutes until lightly golden. Remove from oven and let cool while you prepare the filling.
 
Making the Filling
- In a large bowl, whisk together the Greek yogurt, lemon juice, vanilla extract, and eggs until smooth. Stir in the poppy seeds.
 - Pour the yogurt mixture over the cooled crust and smooth the top with a spatula.
 - Bake for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
 - Let the bars cool in the pan on a wire rack before chilling in the refrigerator for at least 3 hours, preferably overnight.
