Instructions

Preparing the Crust

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, letting the excess hang over the sides for easy removal.
  2. In a medium bowl, combine almond flour, coconut flour, salt, and lemon zest. Stir in the melted butter and honey until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared pan, and bake for 12-15 minutes until lightly golden. Remove from oven and let cool while you prepare the filling.

Making the Filling

  1. In a large bowl, whisk together the Greek yogurt, lemon juice, vanilla extract, and eggs until smooth. Stir in the poppy seeds.
  2. Pour the yogurt mixture over the cooled crust and smooth the top with a spatula.
  3. Bake for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
  4. Let the bars cool in the pan on a wire rack before chilling in the refrigerator for at least 3 hours, preferably overnight.
