- 2 cups bread flour
- 1 cup vanilla or unflavored whey protein powder
- 2 tablespoons poppy seeds
- 1 tablespoon baking powder
- 1/2 teaspoon fine sea salt
- 1/4 cup granulated sugar
- Zest of 2 lemons
- 1 cup plain Greek yogurt, non-fat or low-fat
- 1 large egg
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter, melted
- 2 quarts water
- 1 tablespoon honey
- 1 large egg, beaten with 1 tablespoon water (for egg wash)
- 3/4 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon lemon zest (for glaze)
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the dry ingredients: bread flour, protein powder, poppy seeds, baking powder, salt, sugar, and lemon zest.
- In a separate bowl, stir together the wet ingredients: Greek yogurt, egg, lemon juice, and melted butter until smooth.
- Add the wet ingredients to the dry mixture and mix with a wooden spoon. Knead by hand until a soft, slightly tacky dough forms.
- Divide the dough into 8 equal portions. Roll each piece into a ball and create a hole in the center to form bagels.
- Cover the shaped bagels with a towel and let them rest for 15 minutes.
- In a large pot, bring water and honey to a gentle boil, then reduce to a simmer.
- Boil the bagels in batches for 30 seconds per side, then remove and drain.
- Brush the boiled bagels with the egg wash mixture.
- Bake the bagels for 18 to 22 minutes until golden brown.
- While bagels cool, prepare the lemon glaze by whisking powdered sugar, lemon juice, and lemon zest until smooth.
- Drizzle the glaze over the cooled bagels and allow it to set before serving.
Notes
- For a sweeter glaze, adjust the sugar to taste.
- Store leftover bagels in an airtight container for up to 3 days.
