Lemon Poppy Seed Bagels are a delightful combination of zesty lemon flavor and the crunch of poppy seeds, perfect for breakfast or as a snack.


Ingredients

  • 2 cups bread flour
  • 1 cup vanilla or unflavored whey protein powder
  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/4 cup granulated sugar
  • Zest of 2 lemons
  • 1 cup plain Greek yogurt, non-fat or low-fat
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 2 quarts water
  • 1 tablespoon honey
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 3/4 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: bread flour, protein powder, poppy seeds, baking powder, salt, sugar, and lemon zest.
  3. In a separate bowl, stir together the wet ingredients: Greek yogurt, egg, lemon juice, and melted butter until smooth.
  4. Add the wet ingredients to the dry mixture and mix with a wooden spoon. Knead by hand until a soft, slightly tacky dough forms.
  5. Divide the dough into 8 equal portions. Roll each piece into a ball and create a hole in the center to form bagels.
  6. Cover the shaped bagels with a towel and let them rest for 15 minutes.
  7. In a large pot, bring water and honey to a gentle boil, then reduce to a simmer.
  8. Boil the bagels in batches for 30 seconds per side, then remove and drain.
  9. Brush the boiled bagels with the egg wash mixture.
  10. Bake the bagels for 18 to 22 minutes until golden brown.
  11. While bagels cool, prepare the lemon glaze by whisking powdered sugar, lemon juice, and lemon zest until smooth.
  12. Drizzle the glaze over the cooled bagels and allow it to set before serving.
