Description

Zesty Lemon-Herb Chicken with Chilled Pasta and Crisp Veggies

Ingredients

Scale
  • 8 oz bowtie or rotini pasta, cooked and cooled
  • 1 1/2 cups cooked chicken breast, diced or shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and black pepper to taste
For the Lemon Herb Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon fresh chopped basil
  • 1 tablespoon chopped fresh dill or oregano
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, mustard, garlic, and herbs until well blended. Season with salt and pepper to taste.
  2. In a large bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, and red onion.
  3. Pour the dressing over the salad and toss well to coat.
  4. Fold in fresh parsley and feta cheese, if using.
  5. Chill for 20–30 minutes before serving for best flavor.
