Zesty Lemon-Herb Chicken with Chilled Pasta and Crisp Veggies
Ingredients

- 8 oz bowtie or rotini pasta, cooked and cooled
- 1 1/2 cups cooked chicken breast, diced or shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
- Salt and black pepper to taste
For the Lemon Herb Dressing:
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon fresh chopped basil
- 1 tablespoon chopped fresh dill or oregano
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, mustard, garlic, and herbs until well blended. Season with salt and pepper to taste.
- In a large bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, and red onion.
- Pour the dressing over the salad and toss well to coat.
- Fold in fresh parsley and feta cheese, if using.
- Chill for 20–30 minutes before serving for best flavor.
