- 2 tablespoons olive oil
- 2 lemons (one for juice, one for slices)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Place the fish fillets in a baking dish and pour the lemon herb mixture over them, ensuring they are well coated. Arrange lemon slices on top of the fish.
- In a separate bowl, toss the mixed vegetables with a drizzle of olive oil, salt, and pepper. Spread the vegetables around the fish in the baking dish.
- Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and the vegetables are tender and slightly caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
