- 1/2 cup shredded coconut
- 1/4 cup granulated sugar

- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, shredded coconut, granulated sugar, butter, egg, lemon zest, and lemon juice until a dough forms.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Take small portions of dough, flatten them, add a teaspoon of cream cheese mixture, and seal into a ball.
- Place cookies on the baking sheet and bake for 12-15 minutes until edges are golden.
- Let cool before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Make sure the butter and cream cheese are softened for easy mixing.
- Store cookies in an airtight container to keep them fresh.
