Ingredients

  • Granulated sugar, 200 g
  • Flour, all-purpose, 62 g
  • Baking powder, 2.5 g
  • Salt, 1.5 g
  • Whole milk, 240 ml
  • Melted unsalted butter, 115 g
  • Lemon zest, 1 tablespoon
  • Fresh lemon juice, 120 ml
  • Vanilla extract, 1.25 ml
  • Optional powdered sugar for dusting

Instructions

  1. Preheat the oven to 175°C and grease a 23 x 23 cm baking dish with unsalted butter or nonstick spray.
  2. In a large bowl, whisk together the granulated sugar, all-purpose flour, baking powder, and salt until well combined.
  3. Add the whole milk, melted unsalted butter, lemon zest, fresh lemon juice, and vanilla extract to the dry ingredients. Mix until a smooth batter forms, noting that it may be slightly runny.
  4. Pour the batter into the greased baking dish in a flat layer without stirring.
  5. Bake in the center of the oven for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
