Description

Lemon Cheesecake Bites are a sweet and easy dessert that combines the flavors of lemon and cream cheese in bite-sized treats, perfect for any occasion.


Ingredients

  • 15.25 ounces lemon cake mix, I used Betty Crocker Super Moist brand
  • 8 ounces cream cheese, room temperature
  • 12 ounces yellow candy melts
  • 4 ounces white vanilla almond bark

Instructions

  1. Before adding the cake mix, heat treat the dry cake mix by microwaving it in two 30-second intervals, stirring after each interval. Allow to cool completely.
  2. Using a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat the cream cheese for 2 to 2½ minutes until completely smooth.
  3. Sprinkle the dry cake mix over the top of the cream cheese and mix until fully incorporated.
  4. Tightly cover the cream cheese mixture and chill in the refrigerator for 2 hours.
  5. Line a baking sheet with parchment paper and set it aside.
  6. Using a 1 tablespoon cookie scoop, scoop the cheesecake dough, roll into a ball, and place on the prepared baking sheet. Repeat.
  7. In a heat-safe mixing bowl, heat the candy wafer melts in 30-second intervals, stirring until fully melted.
  8. Roll the cheesecake bites in the melted candy wafers. Use a fork to tap off excess coating and a toothpick to push the ball onto the baking sheet.
  9. Return the coated cheesecake bites to the baking sheet.
  10. In a small heat-safe mixing bowl, microwave the white almond bark in 30-second intervals, stirring well.
  11. Drizzle the melted almond bark over the coated cheesecake bites.
  12. Once all bites are coated and drizzled, return them to the refrigerator until ready to serve.

Notes

  • Be sure to completely cool the heat-treated cake mix before mixing it with the cream cheese.
  • Chilling the cream cheese mixture is essential for easy handling when rolling into balls.
