Description

As a passionate home cook, I find joy in creating dishes that not only taste amazing but also tell a story. One of my favorite culinary adventures has been experimenting with salmon. This fish is not just a staple in my kitchen; it’s a canvas for flavors that dance together in harmony. Today, I want to share a delightful recipe that has become a family favorite: Lemon Basil Ricotta Salmon.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz each), skinless
  • 8 asparagus spears, trimmed
  • 1 cup ricotta cheese
  • Zest of 1 lemon
  • 2 tablespoons fresh basil, finely chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon capers, for a briny kick (optional)
  • 1/4 cup grated Parmesan cheese, for extra creaminess (optional)
  • Fresh dill or parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly each salmon fillet by slicing it horizontally, leaving one edge intact.
  3. In a bowl, combine ricotta cheese, lemon zest, chopped basil, salt, and pepper until smooth.
  4. Lay two asparagus spears at one end of each salmon fillet and spread about two tablespoons of the ricotta mixture over the asparagus.
  5. Roll the salmon tightly around the filling and secure with toothpicks or kitchen twine.
  6. Heat olive oil in a skillet over medium-high heat and sear the salmon rolls for 1-2 minutes on each side until lightly browned.
  7. Transfer the rolls to a baking dish and bake for 15-18 minutes until the salmon flakes easily with a fork.

Notes

  • Use the freshest ingredients for the best flavor.
  • Let salmon fillets sit at room temperature for 15 minutes before cooking.
  • Don’t rush the searing process; let the salmon develop a golden crust.
  • Check for doneness by flaking the salmon; it should be opaque and flake easily.
  • Let the salmon rolls rest for a few minutes before serving.
