Description

Key Lime Pie Yogurt Bark is a refreshing, creamy treat that combines the flavors of key lime pie with the health benefits of Greek yogurt, perfect for hot summer days.

Ingredients

Scale
  • 2.5 cups Greek yogurt plain, non-fat or low-fat
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve or 1 tbsp honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted unsweetened coconut
  • 1 scoop vanilla protein powder

Instructions

  1. In a medium mixing bowl, combine the Greek yogurt, key lime juice, protein powder, lime juice, lime zest, powdered swerve (or sweetener of choice), and vanilla extract. Mix until smooth and well combined.
  2. Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
  3. Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer.
  4. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt mixture is fully frozen and set.
  5. Once frozen, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces.
  6. Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 2 weeks. Store the bark in a single layer or between sheets of parchment paper to prevent sticking.

Notes

  • Adjust sweetness level to taste.
  • For a dairy-free option, substitute Greek yogurt with dairy-free yogurt of choice.
  • This bark can be stored for up to 2 weeks in the freezer.
