Description

As a busy mom, I know how challenging it can be to whip up a delicious meal after a long day. That’s why I absolutely adore this keto meatball stroganoff! It’s a creamy, low-carb delight that comes together in just 35 minutes.


Ingredients

  • 1 lb ground beef
  • 1/4 cup almond flour
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 1 cup sliced mushrooms
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 tsp Dijon mustard
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine the ground beef, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into meatballs.
  2. Cook the meatballs in a skillet over medium heat until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter and sauté the mushrooms until tender.
  4. Add the beef broth and simmer for a few minutes. Stir in the sour cream, heavy cream, and Dijon mustard, and cook until the sauce thickens.
  5. Return the meatballs to the skillet and coat them in the sauce. Garnish with fresh parsley.
