As a busy mom, I know how challenging it can be to whip up something healthy and delicious in a flash. That’s why I’m excited to share my KALE AND QUINOA CHICKPEA SALAD WITH LEMON DRESSING!
Ingredients
Scale
- 4 cups kale, stems removed and chopped
- 1 cup cooked quinoa
- 1 cup canned chickpeas, rinsed and drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, chopped
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper, to taste
Instructions
- In a small jar, whisk together all dressing ingredients.
- Massage kale with half the dressing. Add quinoa, chickpeas, tomatoes, and onion.
- Toss with remaining dressing and serve.
Notes
- For a vegan option, substitute honey with maple syrup.
- Feel free to add other vegetables or nuts for extra crunch.
