Description

As a busy mom, I know how challenging it can be to whip up something healthy and delicious in a flash. That’s why I’m excited to share my KALE AND QUINOA CHICKPEA SALAD WITH LEMON DRESSING!


Ingredients

Scale
  • 4 cups kale, stems removed and chopped
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. In a small jar, whisk together all dressing ingredients.
  2. Massage kale with half the dressing. Add quinoa, chickpeas, tomatoes, and onion.
  3. Toss with remaining dressing and serve.

Notes

  • For a vegan option, substitute honey with maple syrup.
  • Feel free to add other vegetables or nuts for extra crunch.
