Description

Jelly Donuts are a delicious fried pastry filled with sweet jam, perfect for any sweet lover.


Ingredients

Scale
  • 1 cup warm milk (whole milk preferred, 90°F to 100°F)
  • 1 tablespoon instant yeast or active dry yeast
  • 3 tablespoons granulated sugar
  • 4 cups bread flour (spooned and leveled, all-purpose flour can be used instead)
  • 2 large eggs (room temperature)
  • 1 teaspoon salt
  • 8 tablespoons unsalted butter (room temperature)
  • Vegetable oil (enough to fry the donuts, 2 quarts is good)
  • 2 cups granulated sugar (for tossing the donuts in)
  • 1½ cups seedless raspberry jam or strawberry jam (for filling)

Instructions

  1. In a large mixing bowl, whisk together the warm milk, yeast, and granulated sugar. Let sit for 5 minutes or until foamy.
  2. Add flour, eggs, and salt to the bowl and mix with the dough hook for one minute on low speed.
  3. Scrape down the sides and continue mixing at medium speed for 2 minutes.
  4. Add butter one tablespoon at a time and continue mixing until the dough is smooth and elastic.
  5. Transfer the dough to a greased bowl, cover, and let rest in a warm place until doubled in size (60 to 90 minutes).
  6. Punch the dough down and transfer to a floured surface, shaping it into a ball and cutting it into 16 pieces.
  7. Roll each piece into a tight ball and place on prepared baking sheets to rise until nearly double in size (about 30 minutes).
  8. Heat oil in a dutch oven to 330°F to 350°F.
  9. Fry the donuts until golden brown, about 2 minutes on each side, then toss in sugar.
  10. Fill each donut with jam using a piping bag.
  11. Enjoy the donuts while they’re still warm!

  • Make sure to monitor the oil temperature while frying to ensure even cooking.
  • For best results, use fresh yeast if the mixture doesn’t foam initially.
  • The donuts are best enjoyed fresh but can be stored in an airtight container for a day.
