Description
Jelly Donuts are a delicious fried pastry filled with sweet jam, perfect for any sweet lover.
Ingredients

- 1 cup warm milk (whole milk preferred, 90°F to 100°F)
- 1 tablespoon instant yeast or active dry yeast
- 3 tablespoons granulated sugar
- 4 cups bread flour (spooned and leveled, all-purpose flour can be used instead)
- 2 large eggs (room temperature)
- 1 teaspoon salt
- 8 tablespoons unsalted butter (room temperature)
- Vegetable oil (enough to fry the donuts, 2 quarts is good)
- 2 cups granulated sugar (for tossing the donuts in)
- 1½ cups seedless raspberry jam or strawberry jam (for filling)
Instructions
- In a large mixing bowl, whisk together the warm milk, yeast, and granulated sugar. Let sit for 5 minutes or until foamy.
- Add flour, eggs, and salt to the bowl and mix with the dough hook for one minute on low speed.
- Scrape down the sides and continue mixing at medium speed for 2 minutes.
- Add butter one tablespoon at a time and continue mixing until the dough is smooth and elastic.
- Transfer the dough to a greased bowl, cover, and let rest in a warm place until doubled in size (60 to 90 minutes).
- Punch the dough down and transfer to a floured surface, shaping it into a ball and cutting it into 16 pieces.
- Roll each piece into a tight ball and place on prepared baking sheets to rise until nearly double in size (about 30 minutes).
- Heat oil in a dutch oven to 330°F to 350°F.
- Fry the donuts until golden brown, about 2 minutes on each side, then toss in sugar.
- Fill each donut with jam using a piping bag.
- Enjoy the donuts while they’re still warm!
Notes
- Make sure to monitor the oil temperature while frying to ensure even cooking.
- For best results, use fresh yeast if the mixture doesn’t foam initially.
- The donuts are best enjoyed fresh but can be stored in an airtight container for a day.
