Instructions
- In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and sea salt. Mix until smooth and creamy.
- Transfer the ricotta mixture to a serving dish, smoothing the top with a spatula.
- Sprinkle the chopped pistachios and dried apricots evenly over the ricotta dip.
- Garnish with fresh mint leaves if desired.
- Serve immediately with crackers or sliced fruit for dipping, or refrigerate for up to 1 hour to allow the flavors to meld.
