Instructions

  1. Begin by washing the baby carrots thoroughly. If using regular carrots, peel them and cut them into sticks.
  2. In a large skillet, melt the butter over medium heat.
  3. Once the butter is melted, add the carrots to the skillet. Sauté for about 5 minutes, stirring occasionally, until the carrots start to soften.
  4. Drizzle the honey over the carrots and stir to coat them evenly.
  5. Sprinkle in the fresh thyme, salt, and pepper.
  6. Continue to cook for another 5-7 minutes, allowing the honey to caramelize slightly and the carrots to become tender but still crisp. Stir frequently to avoid burning.
  7. Remove the skillet from the heat and add the lemon juice, mixing well to combine all the flavors.
  8. Transfer the honey-glazed carrots to a serving dish and sprinkle with fresh parsley for a pop of color before serving.
