Description
A simple and flavorful side dish featuring baby carrots glazed with honey and butter, enhanced with fresh thyme and lemon juice.
Ingredients
Scale
- 1 pound baby carrots (or regular carrots, peeled and cut into sticks)
- 3 tablespoons honey
- 2 tablespoons butter
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Begin by washing the baby carrots thoroughly. If using regular carrots, peel them and cut them into sticks.
- In a large skillet, melt the butter over medium heat.
- Once the butter is melted, add the carrots to the skillet. Sauté for about 5 minutes, stirring occasionally, until the carrots start to soften.
- Drizzle the honey over the carrots and stir to coat them evenly.
- Sprinkle in the fresh thyme, salt, and pepper.
- Continue to cook for another 5-7 minutes, allowing the honey to caramelize slightly and the carrots to become tender but still crisp. Stir frequently to avoid burning.
- Remove the skillet from the heat and add the lemon juice, mixing well to combine all the flavors.
- Transfer the honey-glazed carrots to a serving dish and sprinkle with fresh parsley for a pop of color before serving.
Notes
- For a vegan option, substitute butter with margarine or oil.
- You can add other herbs like rosemary or dill for different flavors.
- These carrots pair well with roasted meats or as part of a vegetarian meal.
