Description

A delicious and easy-to-make Honey Garlic Shrimp and Corn Rice Bowl, combining tender shrimp with sweet corn and jasmine rice, all coated in a delightful honey garlic sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 cup jasmine rice (uncooked)
  • 1 cup sweet corn (fresh or frozen)
  • 1/4 cup green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste
  • 2 cups water (for cooking rice)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  2. If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw it. In a small skillet, heat 1 tablespoon of olive oil over medium heat, add the corn, and sauté for about 3-4 minutes. Season with salt and pepper.
  3. In a large bowl, combine honey, minced garlic, soy sauce, and sesame oil. Add the shrimp and toss to coat. Let it marinate for 10-15 minutes.
  4. In a large skillet over medium-high heat, add the marinated shrimp and cook for about 3-4 minutes on each side until pink and caramelized.
  5. Fluff the cooked jasmine rice and stir in the sautéed corn and chopped green onions. Adjust seasoning with salt and pepper.
  6. Divide the corn rice mixture among serving bowls and top with the caramelized honey garlic shrimp.

Notes

  • For added flavor, feel free to include a squeeze of lime juice on top before serving.
  • This dish pairs well with steamed vegetables for a complete meal.
