Description
A delicious and easy-to-make Honey Garlic Shrimp and Corn Rice Bowl, combining tender shrimp with sweet corn and jasmine rice, all coated in a delightful honey garlic sauce.

- 1 pound large shrimp, peeled and deveined
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 cup jasmine rice (uncooked)
- 1 cup sweet corn (fresh or frozen)
- 1/4 cup green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil (for cooking)
- Salt and pepper to taste
- 2 cups water (for cooking rice)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
- If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw it. In a small skillet, heat 1 tablespoon of olive oil over medium heat, add the corn, and sauté for about 3-4 minutes. Season with salt and pepper.
- In a large bowl, combine honey, minced garlic, soy sauce, and sesame oil. Add the shrimp and toss to coat. Let it marinate for 10-15 minutes.
- In a large skillet over medium-high heat, add the marinated shrimp and cook for about 3-4 minutes on each side until pink and caramelized.
- Fluff the cooked jasmine rice and stir in the sautéed corn and chopped green onions. Adjust seasoning with salt and pepper.
- Divide the corn rice mixture among serving bowls and top with the caramelized honey garlic shrimp.
Notes
- For added flavor, feel free to include a squeeze of lime juice on top before serving.
- This dish pairs well with steamed vegetables for a complete meal.
