Description

A flavorful dish combining honey garlic salmon with roasted vegetables for a nutritious meal.


Ingredients

Scale
  • 30 ml honey
  • 3 cloves garlic, minced
  • 60 ml freshly squeezed lemon juice
  • 15 g fresh dill, chopped
  • 0.5 g salt (adjust to taste)
  • 0.5 g black pepper (adjust to taste)
  • 900 g salmon fillet
  • 2 medium zucchini, sliced
  • 12 cocktail tomatoes
  • 15 ml olive oil
  • 1 lemon, sliced (optional)

Instructions

  1. Preheat the oven to 200°C. Lightly grease a large baking sheet with cooking spray.
  2. In a small bowl, whisk honey, minced garlic, lemon juice, chopped dill, and half of the salt and pepper. Spread the mixture evenly over both sides of the salmon fillet. Place the salmon at the center of the baking sheet and optionally top with lemon slices.
  3. Season the sliced zucchini and cocktail tomatoes with the remaining salt and pepper. Drizzle olive oil over the vegetables and arrange them evenly around the salmon on the baking sheet.
  4. Bake in the preheated oven for 15 minutes.
  5. Switch the oven to broil and cook for an additional 3 to 5 minutes until the top is lightly browned, monitoring closely to avoid burning.
  6. Remove from oven and serve immediately.

Notes

  • Adjust the sugar and salt as per your preference.
  • Can substitute salmon with another fish if desired.
