Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound cooked chicken or beef sausage, sliced into 1/2 inch rounds
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen or canned corn kernels
  • 2 tablespoons all purpose flour
  • 2 cups low sodium chicken or beef broth
  • 1/2 teaspoon dried thyme (or fresh, chopped)
  • Salt and freshly ground black pepper to taste
  • 4 cups prepared creamy mashed potatoes
  • Fresh parsley or thyme for garnish, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium high heat. Add the sliced sausage and cook, stirring occasionally, until deeply browned and caramelized on both sides. Remove the sausage from the skillet and set aside.
  2. Reduce the heat to medium. Add the chopped onion to the skillet and cook, scraping up the browned bits from the bottom of the pan as the onion softens, about 5 to 7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Sprinkle the flour over the cooked onions and garlic. Stir constantly for 1 minute to create a roux.
  4. Gradually whisk in the broth, scraping the bottom of the pan until the gravy thickens, about 3 to 5 minutes.
  5. Stir in the corn kernels and dried thyme. Return the sausage to the skillet and simmer for 5 to 10 minutes.
  6. Adjust seasoning with salt and pepper as needed. To serve, spoon mashed potatoes onto plates and ladle sausage mixture on top. Garnish and serve hot.

  • For a healthier option, use turkey sausage.
  • Feel free to add other vegetables, such as bell peppers or spinach.
