- 6 large eggs
- 1 cup milk
- 2 cups frozen hash browns, thawed
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow onion, diced
- 6 slices bacon, cooked and crumbled
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, whisk together eggs and milk until well combined. Stir in salt, pepper, and paprika.
- Layer the bottom of a greased 9×13 inch baking dish with hash browns. Sprinkle with half of the cheddar cheese.
- Scatter the diced bell peppers, onion, and crumbled bacon over the hash browns.
- Pour the egg mixture evenly over the ingredients in the baking dish. Top with the remaining cheddar cheese.
- Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is lightly golden.
