Description

Delicious and nutritious brownies made with cottage cheese and packed with protein.


Ingredients

Scale
  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup oat flour (or blended oats)
  • 1 scoop chocolate protein powder (about 30g)
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/4 cup dark chocolate chips or chunks (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a small 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a blender or food processor, blend cottage cheese, eggs, honey (or maple syrup), and vanilla until smooth.
  3. Add cocoa powder, oat flour, protein powder, baking powder, and salt. Blend again until just combined.
  4. Fold in the chocolate chips if using.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out with a few moist crumbs.
  7. Let cool completely before slicing into squares. Store in the fridge for a firmer texture.

Notes

  • Using blended oats for oat flour is a great alternative if you don’t have oat flour on hand.
  • These brownies store well in the fridge.
