A healthy and flavorful chicken and sweet potato rice bowl that is easy to prepare and delicious.
Ingredients

- 1 lb chicken breast, diced and seasoned with salt and pepper
- 2 cups sweet potatoes, diced
- 2 cups cooked brown rice
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp tahini (for drizzle)
- 1 tbsp lemon juice (for drizzle)
- 1 tbsp water (for drizzle)
Instructions
- Toss sweet potatoes with olive oil, paprika, salt, and pepper. Roast at 400°F (200°C) for 20 minutes.
- Cook chicken in a skillet until browned and cooked through.
- Whisk tahini, lemon juice, and water for the drizzle.
- Layer rice, chicken, and sweet potatoes in bowls.
- Drizzle with tahini sauce before serving.
Notes
- Make sure the chicken is cooked to an internal temperature of 165°F (75°C).
- Feel free to add other vegetables for added nutrition.
